Cajun sausages

We received this question in the summer (sorry for the delay in posting a reply).

"I was just having a conversation with a friend in the UK. I am going to send her some Louisiana spices and a real Cajun recipe to make red beans and rice only now I am wondering if the sausage in the UK supermarkets are even comparable to the ones here in the states...are there brands similar to the ones we have in Louisiana?

I'm not talking bratwurst nor breakfast sausage. Can you please enlighten me?"

After some research we found recipes for Red beans and rice and also investigated Louisiana (Andouille, Cajun or New Orleans) sausages.

Louisiana means spicy Cajun cooking - such as gumbo and jambalaya. We found a recipe for Louisiana sausages in "The Sausage Making Cookbook" by Jerry Predika. The ingredients for 2.5 kg of medium minced pork shoulder are 2 tsp salt, 2 tsp black pepper, .5 tsp allspice, 2 tsp thyme, 1.5 tsp cayenne, 1.5 tsp chili pepper, 1 large minced onion, 4 gloves pressed garlic and a US cup of water.

Cajun sausages are often smoked and are called andouille in the USA. They should not be confused with the French tripe sausages called andoullette or confusingly andouille.

Apart from special sausages made by butchers the closest sausages we can buy in the UK are probably a cooking chorizo or a smoked garlic sausage.
