The Cambridge sausage is made with 93% Saddleback pork and flavoured with nutmeg and ginger. The sausages are made with course chunks of high quality, prime meat. As with all rare breed sausages they have quite a high fat content.

The meat is dark and very flavoursome; the spices subtly compliment the meat, adding a slight warmth. We baked them and were impressed by the small amount of fat which they lost and the long, lingering aftertaste of pork and spices.

The sausages can be brought from a farm shop, by mail order and at a number of farmers markets in the Sought East and East Anglia.

The Cambridge sausages are expensive at 12.50 a kilo but this is a very high quality sausage. Highly recommended.
