Sausage and tomato sauce

A quick pasta dish. The sauce can also be eaten with polenta.

Ingredients
500 g Italian sausages
Large can chopped tomatoes
2 glasses red wine
2 tablespoons tomato puree
500 g pasta shapes
1 tablespoon dried thyme or oregano
Salt and black pepper
Parmesan to serve

Method

Skin the sausages and fry in olive oil, breaking the sausages up into small pieces
Add the wine and reduce by half
add the chopped tomato, tomato puree and herbs
Season and simmer for 20 - 30 minutes
Cook the pasta and combine with the sauce
Serve with grated parmesan

Any spicy sausages - Italian, French, Mergeuz or Chorizo
