Ultimate mash

This is a method used by the top French chef Joel Robuchon. He uses half as much butter as potatoes. Tastes superb but a worry on the calorie front. The quantities have been reduced accordingly.

Ingredients
500 g potatoes
250 g unsalted butter (one whole pack!)
50 ml double cream
Salt and black pepper

Method

Cook and drain the whole potatoes
Dry in the pan for a few minutes
Mash with a ricer, return to the warm pan, add the butter and warmed cream, stir well
Season with salt and pepper
Serve in very small quantities
