Red onion relish

Excellent barbecue food, this is also good with any grilled pork. Adding cayenne pepper is optional but gives a real kick. This can be kept for a few days in the fridge. As with most chutneys and relishes, this dish improves with keeping.

Ingredients
1 large red onion, finely chopped
2 peppers (different colours), deseeded and finely chopped
2 garlic cloves, finely chopped
100 ml water
50 ml red wine vinegar
50 g soft brown sugar
Pinch of cayenne pepper (optional)
1 or 2 cloves (optional)
Pinch of ground ginger
Pinch of all spice
Salt and generous black pepper

Method

Combine all the ingredients in a saucepan, bring to the boil and simmer for 25 minutes
Serve cold
