Mini Toad in the Hole

The 'cocktail' version of Toad in the Hole is good for parties or children. These can be made in small cake or bun tins. Alternately use muffin trays and one sausage per muffin to make more substantial individual toads (serve 2 per head for a meal). Both are really easy, especially if you use one of the silicone baking trays which are virtually guaranteed non stick.

Add a teaspoon of onion marmalade (omit or use less if you are making them for children) and you have a self contained toad and sauce.

Ingredients
Cocktail toad

2 tablespoons of batter, a cocktail sausage and a scant half teaspoon of onion marmalade

Muffin toad

5 tablespoons of batter, 2 cocktail sausages (or a normal sausage cut into 2 cm lengths) and a teaspoon of onion marmalade

Method

Warm the tins in the oven, add a thin film of sunflower oil and leave until this is really hot
Take the tins out of the oven; add the batter, the onion marmalade and the sausage
Return to the hot oven and cook for about 15 minutes (cocktail) and 20 minutes (muffin)
They are good hot or warm
