Butler's Banger

Leading quality catering butchers, Aubrey Allen, is launching a new sausage in collaboration with one of the country’s top pig farmers.

The new sausage will make its first public appearance next month at Hotelympia, the UK’s premier hotels and restaurants trade exhibition held at ExCeL in London’s Docklands from February 19 to 23.

The sausage has been named Butler’s Banger because it has been produced from top quality free-range pork produced by Suffolk-based Jimmy Butler, winner of Farmers’ Weekly magazine’s Pig Farmer of the Year.

“We believe the Butler’s Banger will become a classic,” said Peter Allen, managing director of Coventry-based Aubrey Allen. “The sausage is made with coarse-cut free range pork and contains liberal amounts of ground pepper and fresh leeks.”

Jimmy Butler – with his wife Pauline and two sons – manages 1,200 free-ranging sows which are cross-bred from Duroc, Large White and Landrace. Only gilt (female) pigs with a good covering of fat and full traceability are endorsed by the Aubrey Allen Assurance Scheme that ensures that each cut of pork is top quality.
