Jack Scaife are specialist pork butchers. They make bacon, hams and sausages using free range pork. They are probably best known for traditional dry cured bacon which has won numerous awards. It is available smoked and unsmoked in a wide variety of cuts – as well as middle, back and streaky you can also buy whole pieces and the rarer collar cut.
They make 3 varieties of sausage – cocktail, Cumberland and honey roast. They also stock white and black puddings made by RS Ireland.
Jack Scaife products are stocked in a number of outlets (the web site has information), they can also be brought at food fairs and via mail order.
I was introduced to this oasis of flavour many years ago at the South of England Show. I was able to sample the tasty, flavoursome, and moist sausages produced. Magic. The same can be said of the bacon that they produce. When I go to the show and spy their stand I will regularly purchase 5-6 kilos of bacon and sausages to freeze and consume over the ensuing months!
