product picture How many village shops sell sausages and bacon? How many have a Royal Warrant? I can only think of one which is the shop in the small Lakeland village of Waberwaite.

This is the base of Richard Woodall Ltd, a company which has been run by the same family for nearly 200 years. The family farm produces high welfare pigs from straw filled barns (see picture on website). The herd has been closed for 25 years, this prevents the introduction of disease and means that it can be reared without routine medication and growth promoters.

Bacon is dry cured, it has a good fat covering (for taste) and will not shrink or leach white gunk. The pancetta (thin streaky bacon) is a favourite either fried or used on top of a roast chicken. They also sells hams and air dried hams which are a match for good parma ham.

Cumberland sausage is a speciality. Sold in coils it has a chunky, course cut texture and a peppery bite. Try to do it justice by cooking in the coil and serving with mash and gravy.

You can buy on line, at the post office, Booths supermarkets and independent retailers throughout the country (including Fortnum & Mason).

We brought some of the Cumberland Sausages with Ale from Booths (from Sausage of the Week). As suggested we had them with mash and more beer - that what I call a tea! Nice cold as well.
