A visit to a rare breeds show in 1995 has developed into a butchers shop selling one of the widest range of rare breed meat in the UK. Janis and Alan Bailey breed (wait for it) Gloucester Old Spot, Tamworth, Saddleback and Berkshire Pigs, Dexter and Irish Moiled Cattle and Southdown, Suffolk and Soay Lamb. The pigs are reared outdoors in family groups and are weaned at 14 weeks.
All are well hung (pork for a week, beef for at least 3 weeks) and then sold in the butchers shop. They also buy in organic beef and lamb. They process on average of 2 pigs per week so the breed used in the sausages will vary from week to week.
They make a large range of sausages. Most are preservative free, varieties include a mild Irish breakfast, a stronger English breakfast (more suited to cooking with onions), Cumberland, black pudding, Tamworth butchers sausage, Beef & Guinness and Lamb & Rosemary. They cost between £6.96 and £7.95 and are also available frozen from the small farm shop at 37 Killyleagh, Downpatrick. They have a website, this currently covers farmhouse accommodation but will soon be expanded to cover food sales.
I recently purchased the Tamworth sausages and I have to tell you that they are the most flavourful sausages I have EVER tasted!!My fussy teenage daughter could not believe how different they tasted from supermarket brands (Duchy Originals included) There was no vile after-taste and the texture was markedly superior. Well done ....the animals are definitely kept happy and the proof of the pudding is in the eating. We will be singing your praises in future.
