One of the few producers who use rare breed meat and are also registered as organic. They use free range Saddlebacks for a large range of pork products which are sold via the farm shop, markets and mail order. They make a range of 8 sausages including a traditionally coiled Cumberland (96% meat), Pork & apple and Beef, Pork & sun dried tomato. Prices range from £5.85 to £6.85 per kilo.
They also sell 'farmer ham', this is made in a Parma ham style and is good. (It cannot be called Parma ham becuase of EU PGI (Protected Geographical Indication) status.)
I have been ordering meat off the country cuts website for a few months, and I am pleasantly surprised that the food keeps getting better and better. I have nearly tried all the ranges of sausages, and must say that the Cumberland sausage is by far the best I have ever tried.
I will definitely be paying the shop a visit the next time I am in the area.

Have just returned from holiday in Lakes. We visited Country Cuts while we were there and were very pleased by the hearty welcome we received. The meat is fantastic, the Cumberland sausage is amazing. We will be regular customers of their web site!
Whilst staying in the Lake district (Eskdale), on one of our visits, we came across a farm shop. The shop was based on the farm and sells a wide range of organic meats. It ranged from; pork, beef, lamb, mutton, salmon etc....They also sell free range chicken and duck eggs. While we were there we bought a selection of their homemade sausages. The Cumberland sausage was fantastic, we would definitely recommend it to any one who is visiting the area. We recieved a very warm welcome from the owner and the rest of his staff. They obviously knew a lot about what they were doing. Good luck to them.
We stopped by Country Cuts whilst visiting Wastwater and bought lots of sausage and gammon etc. The farmer ham (eg parma ham) is amazing and their cumblerland sausage is some of the best I''ve ever had. Also bought some Bacon which was very good. The owner obviously enjoyed his job and was fantastic with - describing the meat and how the sausages are made etc. Will definately be ordering from them on the internet!
