One of our top 10 producers. Lishmans are based in Ilkley, the Yorkshire town immortalised in the song On Ilkley Moor bah tat. The business is run by David Lishman and is a local institution. It is located in the middle of Ilkley on the A65 and has a car park located behind the shop.
They usually have 3 or 4 butchers serving but still expect queues (they have a ticketing system). They have won many awards including Champion of Champions in 1999 (Plain Pork) and 2001 (Pork & Chives) and best butchers shop in Northern England in 2001. They have monopolised the Yorkshire sausage championships, winning it 5 times in the last 9 years.
Lishmans source meat from local farms and provide details of the farm and breed in the shop. They use a variety of commercial and rare breed meat. The last time I went they were using saddleback pork.
Sausage varieties include Plain Pork, Pork & Chive, Pork & Black pudding, Toulouse, Bratwurst and my current favourite Pork with Garlic & Tomato. You can be confident that whatever variety you buy, they will be excellent. The sausages are made with a medium to fine texture and are succulent and juicy. Shrinkage is minimal and they will leave very little fat in the pan. Everything from Lishmans tastes good. As well as sausages, I always buy his dry cured bacon and one of his prepared dishes such as Stilton Meat Loaf or a Stuffed Cushion of Lamb.
They do not offer a mail order service. However Ilkley is well worth a visit. Other good food shops are Bettys Tea Shop and a branch of Booths (described as the Waitrose of the North). Booths sells a good range including RS Ireland Black Pudding plus sausages and bacon from Richard Woodall.
Part of our twice a month food pilgrimage - park in Booths, shop there, off to Bettys and into Lishmans on the way back! All the sausages are great, especially the Cumberland, great pies as well.

The championship pork sausages are superb with gammon or bacon and eggs. I''ve yet to try the other varieties. The steak and stilton pies are first class and very filling. Always worth a visit.

We ate Lishman''s sausages and rashers this weekend for the first time and they were good. However, the sweet black pudding is not something we would try again.
I live with a veggie but for a birthday treat I was allowed to cook some pork and black pudding sausages given to me by a work colleague! Words fail me, it was such a joyous occasion I nearly wept! Thank you!
Lishmans is quite simply the best Butcher and Meat Specialist I have ever been to. We travel to Ilkley twice a month to stock up on our favourites..Steaks-Beef & Pork...Stuffed Chicken Cushions...the most succulent Sausages and Bacon like you''ve never tasted before and fabulous home made Chicken Kievs. It''s hard to go into the shop and find making your selection easy!!
The service is impeccable too. A handy ticket queing system is in operation and this gives you lots of time to review your choices because the shop is always full.
David Lishman and his happy team are an absolute credit to Yorkshire and I am so glad they sell to other businesses outside Ilkley. Our local speciality Deli stocks his Pork Pies and Sausages and this is handy when you just dont have the time to whizz over to his Emporium in Ilkley.
