Crombies of Edinburgh - Whisky Hog & Wild Thyme
Crombies are an Edinburgh institution, an old fashioned establishment where you are served by an expert butcher and then take your goodies to the cash desk for payment. They make top quality sausages - hence they are one of our Top 10 producers and the second producer to be featured twice on SOTW. The first sausage we selected was the Auld Reekie, which is still fondly remembered!
Crombies are a third generation butcher who make over a 100 sausage varieties, the popularity of the shop and mail order business means that turnover is high and you can safely buy any of the varieties (I sometimes worry about sausages sitting around for too long when I see shops with dozens of varieties). The Toulouse has been picked by Clarissa Dickson-Wright as her favorite sausage.
The Whisky Hog & Wild Thyme could be a disaster of clashing flavours. What you get is a finely textured banger with flecks of thyme and a subtle whisky warmth. I'm not a whisky expert so don't know if the taste is strong enough to be readily identifiable. There is defiantly something there, they taste good but some may find them an acquired taste. We fried ours for 30 minutes in heavy frying pan, hardly any fat was released and they were moist and moreish. They cost £6.95 a kilo and are worth an adventurous 7.5/10 on our scoring system.
