The Champion of Champions Competition is the highlight of the year for sausage makers. The champion sausage was Pork & Caramelised Onion entered by Allan Bennett.
This is a chunky pork sausage flecked with pieces of caramelised onion. They are made with an even, medium texture, are moist and lose very little fat during cooking. Flavouring is a twist of the classic pork, sage and onion combination, with the caramelised onion adding sweetness to the meaty pork taste.
They cost £5.68 per kg and are one of 8 different varieties (including the plain pork which came second). They are sold from the shop in Codsall but can also be sent by courier. Try them in a toad in the hole.
